Default leftover Limburger cheese?

I like a Lim sandwich every once in a while with tomato and sweet
onion - but, what can I do with the amount left over? I wish they'd
package it in much smaller portions. Does is freeze successfully,
and should I shred it first? Any other ideas rather than toss or
shove to back of fridge to be forgotten til next clean sweep?
