Default Viking Cooking Schools

I am pouting because the Atlanta Viking Cooking School will be hosting
Michael Ruhlman on a night I have to work and I won't be able to go.
I've never attended a program there and wondered if anyone here has
taking any of their programs? Enjoy it? Find it a good value for the
cost? There are 11 Viking Cooking Schools around the country.

Yeah, it was up there this weekend. Bourdain did the intro to the
book, I think.

I do like Ruhlman so much. Have you read any of his books? I have
his Chef series, and the cookbook he did with Eric Ripert, and the
Bouchon cookbook. The first one he did with Thomas Keller is on my
list too, but I doubt I will cook much from it, if I get it: The
French Laundry Cookbook. Bouchon seems much more approachable to me.

Hah!!!

Do you know how hard it is for a nurse to get a night off?????? LOL. I
am trying to find someone to trade with for a night when an old long
lost friend is coming into town... Fat Chance!! Nurses can't just
say they aren't coming in, unless they are sick... There has to be
someone to cover for them...ie, another nurse to take their place. And
one with the same skill set.

Christine, who sometimes thinks that being a nurse is the pits.

Yeah, I'm considering how I could swing it?? It does sound like a great
night to be there. We self schedule at work so I certainly would not
have signed up to work that night had I but known enough in advance of
his program. I have now signed up for email updates from Viking so
perhaps I won't be behind the eight ball again.....

week. Lets meet up in NY and check 'em out! I could do that easily enough.

Thankfully I work with a great group of nurses and we cover for each
other readily enough. I was thinking of asking one of the day shifters
if I did their 7 AM to 12 PM hours, they could come in at noon and stay
till 12 AM for me and then I'd be able to go to the program as well as
work. We don't have to bother management with the details and it works
nicely as then people aren't just calling off (we don't have to give a
reason when we call in and say we won't be able to work) when they know
they have something else going on.

I wish I could. But I am two weeks into my new contract here...and
not much time off right now. Plus I am halfway across the country....

TNIC) and he'd be so distracted by me and the girls that Tammy wouldn't

Seriously though, I'd love to see Bourdain and Ruhlman together but I
bet that BN event would be a zoo because it isn't a ticketed event and
the hordes would come. I'd rather do a controlled environment event if
given my druthers.

I think they'd be terrific but yes, a controlled environment would be
better. I read recently of
a dinner at which Tony was going to be the main attraction. It was "only"
something like
$150/person and had it been a little closer to home.....

Speaking of *your* chef, did you gals see the new book about Last
Meals? It's a coffee table book. In it are about 50 chefs in all sorts
of poses, scenes, etc, describing what their last meal on earth would
be like. You **HAVE** to see Bourdain's photo. I am not going to
describe it, but you just HAVE to see it. Stop by a bookstore
somewhere, and find it.

I have taken some classes at the Viking Cooking school. Some were more
enjoyable than others which had a lot to do with the instructor. I have
to say that I have kept all the recipes from my classes and use some of
them quite often.

I think the classes are a little pricey, but again, very informative and
usually lots of fun. Plus you get a discount at the store after the
class or the day of or something similar.

From my sister in law who met him a few years ago on the Today show, he was
a jerk through and through. She was there with a group of people in dental
services who were being honored and were invited in at the end of the
taping. The celebrities were doing the picture/autograph thing afterwards.
SIL said something "small talky" to Emeril and he just gave her dirty look
and said, "I'm not here to chat". I can't manage to stomach him since. Ah
well, perhaps just one perception.

I recognize this attitude.

One time I was taking an art class and everyone was fawning over the
'professor/artist/painter' who was selling probably 10 of his larger sized
paintings (original). When it came my time (in line) he basically gave me
the cold shoulder and started chatting with the person behind me -- I had
the painting all picked out that I wanted and I was hoping by the time I got
up to him, it wouldn't have been sold. Looking back, I'm wondering (since
they weren't cheap) that he didn't have one of the persons in his entourage
doing this sort of work for him.

I cannot look at one of his books without being thankful that I didn't buy
one of his paintings.
These feelings we have about the 'celebrities' last a looooong time.

We got to know a relatively well-known artist before she became famous and
has always been very kind and personable to my family. She has taken on a
rather tarnished image now but to us is still just the very friendly person
who still emails once in a while, lets us know when she is in our neck of
the woods, etcetera.

Good and Bad seem deeply embedded.

Your experience sounds like this 'tude and behavior is typical Emeril. I
know that fame goes straight to the heads of lots of sudden celebrities, but
damn remmember us we but your books and watch your show perhapd being nice
wouldn't kill you.

Thanks for writing this. How I love Mario!

I've only bought one of Emeril's books, and that was recently. It was one of
his first, "Emeril's New New Orleans" and some consider maybe the best.

Oh, Oh, I think I have another one, I forget - but both were bought "on the
cheap."

That's a hoot! One wonders if you did throw down those books with a "BAM"
that he might have seen his ridiculous error and signed them. At any
rate -- his loss as a human being.

Quite so!!!! Have you seen any of the Harry Potter books or films?

Hagrid was played by Robbie Coltraine. He is a Scot and very famous here.

I was at the airport one day, and in he came with his wee wife and
entourage.

Two very well mannered and sweet wee girls approached him. 'Please may we
have your autograph Mr Coltrane?' He is a huge man and he sneered down at
these two lassies and said. 'I don't give autographs'

He needs to remember who he gets his money from I have had no time from
him since then and shortly after, his wife left him!!!

Inexcusable. He should be embarrassed.

I can understand it must get tiresome being stopped by people
all the time, but it was a book signing.

I'm sorry he was such an a**hole during your book-signing, Margaret. You
shoulda thrown the books at him.

Here's one example of when he was nice to his fans: My mom, brother, SIL,
and nieces were all in the audience during one of his shows a few years ago
(the one with Pat Benatar and her husband as the featured guests). During
one of the commercial breaks, he came into the audience and took the hands
of both of my nieces and led them and other kids in the audience up to the
stage/set and got them ice cream treats from the freezer. He was really
sweet to the kids.

Wow...what a difference in the two attitudes. Mario just rose a bit in
my esteem...Emeril sounds like an ass. I will avoid him.

Don't they get paid for these things anyway? And even if not, people
are BUYING THEIR BOOKS...they're making money. Emeril's lost a lot of
money now from word of mouth.

I've heard that she's nice too.

The opposite about Rachel Ray. A friend of mine here worked at a diner
that she profiled on $40 a day and said she was a complete bitch when
she was there...Ordered that she was constantly kept in coffee "Hey you!
Coffee now!" (pointy finger) My friend said that she ordered all
customers be kept out while they were there, then when she left she told
waiting customers that she didn't know why they were kept waiting.

Mario is an excellent teacher and has a passion that shows. What
concerns me about him is that he's heading down the road of Paul
Prudomme. Mario has become so huge that he's a walking heart attack in
the making. He's a young man with young children and I fear for him.

Emeril just reminds me of the hunchback of Notre Dame. He doesn't
inspire me in any positive way <shrug>.

Julia's life story was fascinating. That she didn't know how to boil
water when she married is amazing. But obviously she appreciated good
food even if she couldn't prepare it at that point.

I've heard that a number of times. One occasion she left a waitress
in tears. What a witch.

I forgot to say, I don't know if they make money for their
appearances. It might be in the contract they signed when the
publishing house agreed to print their book that they must do
publicity and signings.

Has nothing to do with how they treat their fans, of course. It's
a book signing, sit there, sign books, all the time smiling and
pretending you're nice. It's not like Margaret cornered him in the
men's room.

(laugh) There's a thought, Margaret chasing celebrities into the
rest rooms.

I recently organized a conference with a nationally known speaker/author
and was shocked to find out that even after 30 years of doing public
speaking she still had stage fright! She was rude, obnoxious,
threatening to go home if anything was out of place,,,,her head was
spinning right up until she took to the stage and turned her performance
"on" and started speaking. No one would have imagined this humorous
dynamo of a speaker was feeling so nervous! I asked her if she'd tried a
beta blocker to help quell the stage fright response and she already
took one. LOL When I drove her back to her hotel the first thing she
said to me was "Do you hate me??" which was probably about as much
apology for her earlier behavior as she could muster?

So perhaps some of these authors aren't as comfortable doing the "off
the cuff" chatting and glad handing as they are assumed to be?

I can definitely understand that. Jitters before a speaking performance,
who can't imagine that? I think I'd be Just get me some water and
go away and leave me alone. But in this instance, he's not speaking before
a crowd, he's signing books and he'd been doing it for a while before
Margaret got to him. I guess he was just getting tired, but there was no
reason to throw a tantrum like that.

Especially not to my beloved Margaret.

But I can also imagine that these chefs and authors get tired of the
book signing circuits and might feel as if the public is just sucking
them dry...always expecting them to be witty, outgoing and friendly to
the last person in line as the first and it was a line of a thousand.
Perhaps some just arne't that way naturally and it is a struggle? I'm
not excusing it, mind you... just speculating on why it might have happened?
