>From all the reading I have done, slashing seems to be *nearly*
mandatory for sourdough recipes. I've read some reasons for this, but it seems they would all apply to yeasted breads as well. So, my two questions: 1. Why slash sourdough loaves, but not yeasted loaves? 2. Is slashing of a sourdough loaf necessary if it is baked in a pan rather than freeform? Thanks! Cherie in IL |
