T's English Muffins

3 1/2 cup flour
1 pkg instant yeast
dash of salt
1/4 cup margarine
2 Tbsp honey
1 cup water

Place pan of water in oven; turn oven on to lowest setting (120-170).
Measure flour and yeast in bowl, set aside. Put water, honey,
margarine and salt in glass container; nuke it for 1 min 20 secs on
high. Pour liquid into flour; mix; knead 'til like bread dough - not
too long.

TURN OFF OVEN. Sprinkle cookie sheets with cornmeal. Roll dough to 1/4
inch thick. Cut 12 3 inch circles, put on sheet, sprinkle top with
cornmeal. Cover; put in oven to proof/rise 1/2 hour. After 15 imn,
preheat skillet/griddle to about 325-350 for remaining 15 min. Put
raised muffins on griddle, 7-7 1/2 minutes a side. Enjoy!
