Appetizers

Sweet & Sassy Chicken Wings

2 c brown sugar
1 c soy sauce
2 garlic gloves, minced
2 tsp ground ginger
3-5 lbs chicken wings
1/2 veggie oil

Combine first 4 ingredients. Place wings in marinade mixture; cover
andchill for 1 hour. Drain wings and bring marinade to room temp. Pour
oil in a non-stick frying pan-best if use wok--heat the oil and pour
in themarinade. The marinade will be foamy. Next slowly add the wings.
Turn wings to keep from sticking and cook for 25 mins.


Old Fashioned Ham Biscuits

1 pkg of party rolls (20-30 rolls)
1 stick of real butter, softened
1 1/2 tsp poppy seeds
1 tsp worcestershire sauce
1 1/2 tbsp dijon mustard
1-2 tbsp grated onion
1/2 lb of smoked ham, sliced or chipped
1/4 swiss cheese, thin sliced

Preheat oven to 400*. Leave rolls in pan. cut all the rolls in half,
placing the tops aside. Combine next 4 ingredients, making a spread.
Addspread to both top and bottom of rolls. Add the ham and cheese to
thebottom rolls then replace tops. Wrap all in foil and heat until
cheesemelts. (about 10 to 15 mins).

Main Course

Vegetarian Chili

1 c sliced onion
1 c of sweet bell pepper, cut into 1/2 cubes
1 lb fresh mushrooms, cut in half/cleaned
2 tbsp margarine
1 garlic glove, crushed
1 1/2 tbsp chili powder
1/4 crushed hot pepper
2 cans (14 oz) stewed tomatoes
2 can (15 oz) drained kidney beans
1/2 tsp saltgreen onions, chopped, garnish (OPTIONAL)
crushed fritos, topping, (OPTIONAL)

In a 5 qt pan, saute onion, bell pepper and mushroom in margarine
until tender. Add garlic and the next 3 ingredients. Bring to a boil,
reduce heatand simmer for 15 mind. Add beans and salt. Simmer for
another 10 mins.Remove from heat and serve in bowls. Let guests add
their crushed fritos tothe top and green onions as well.


Campfire Chili

3 lbs ground beef, lean
1 lb hot ground sausage
3 medium onions, chopped
4 garlic cloves, minced
1/4 c chili powder
2 tbsp flour1 tbsp sugar
1 tsp salt
2 can (28 oz each) whole tomatoes, undrained and chopped
3 can (16 oz each) kidney beans, drainedcrushed
fritos (OPTIONAL)
green onions, chopped/garnish (OPTIONAL)
1/2 c grated chedder cheese (OPTIONAL)

In a large pot, combine beef and next 3 ingredients. Brown meat
into finepieces. Drain meat from excess fat and oil. Add chili powder
and next 5 ingredients. Cover and simmer for 1 hour. Add beans then
simmer for next 20mins.

Let your guests add the toppings of cheese, onions, and cheese. Great
w/ a dollop of sour cream!!!!

Dessert


Chocolate Peanut Butter Bites

1 jar (12 oz) peanut butter, smooth and creamy (I use the honey
flavored kind)
1 box (16 oz) confectioners' sugar
1 1/2 stick butter, melted
9-10 oz milk choc candy bars, melt in a double boiler

In a large bowl, mix PB, butter, sugar. Spoon mixture into a well
buttered 13 X 9 X 2 inch pan. Butter your hands up and pat down the
mixture. Spread the choclate. Refriderate for 1 hour. Bring back out
and let stand at roomtemp for 10 mins.

Cut into squares.
