Default Spinach Bisque

Spinach Bisque

1/2 cup chopped onions
2 tablespoons light margarine
1/3 cup flour
1/2 teaspoon salt
1/8 teaspoon nutmeg
2 1/2 cups skim milk
1 cup fat-free chicken broth
2 ounces Velveeta Light -- cubed
1 package frozen chopped spinach -- thawed and drained

In a 3-qt. saucepan, saute onion in margarine until tender. Stir in the
flour and seasonings until smooth. Gradually whisk in the milk and chicken
broth. Stir constantly over low heat until it thickens a bit.
Add cheese; cook and stir over low heat until melted.
Add spinach; cover and simmer for 4 - 5 minutes or until heated through.

Serves: 4
