It was easy to make, and a chocoholic's dream. After eating this, you'll laugh at any of those wimpy desserts that dare to call themselves "Death by Chocolate." 1 lb bittersweet chocolate (I used Ghirardelli 60% baking bars) 1/2 lb unsalted butter 8 eggs In a double boiler over simmering water, slowly melt chocolate and butter together to a temp of 115 F. Beat eggs for 5 minutes or so until fluffy and doubled in volume. Fold eggs, 1/3 at a time, into chocolate/butter. Pour into 8-inch springform pan (parchment on bottom, greasaed sides). Place in a boiling water bath that comes halfway up the sides of the springform pan. Bake at 325 F for 22-25 minutes, until cake reaches 140 F in the center. Cool, then chill overnight. -- Mike Brandt |
