If you are not determined to make casseroles - I use my grill pan to
cook big portobello mushrooms whole and then serve them on hamburger
buns. You could also grill squash or eggplant slices and serve them
the same way. Quick and easy.

If you are determined to make casseroles - make them over the weekend
or the night before. Quiche is easy to make ahead of time and tastes
good when served cold. I assume that you eat dairy.

ps to everyone else: Are you getting points for "outing" her as a true
vegetarian? It's sounding like the Spanish Inquisition out there. For
all you know, she picks the tuna out of her casserole. What possible
difference does it make to you?

I've heard about fur and leather. (I don't buy fur, but sometimes leather.)
But wool? Is this because of the sheep getting cold? I've been in China
and seem them thar' worms in the silk factory. What's this about not to use
silk? Beeswax, how does this hurt the bees?

I think Vegans and PETA have taken a hit, because of some of the things that
others can't understand, and possibly that is the reason that people react
so strongly to the word, "vegetarian" and "vegan." One has to be prepared
for this reaction if one claims to be a vegan/vegetarian. I came to the
realization a number of years ago that some people react to the word,
"artist" almost as strongly. I suppose I react to people with nobs on their
tongues and rings in their noses and have my own prejudices about tattoes.

Tattooes, tongue knobs, rings in nose?
Well -- which is it?
My f-i-l (80 this month) about fell on the floor when I said a few weeks ago
that I wouldn't mind if my DH had a pony tail. But f-i-l has a tattoe.
I've never scorned him for it. He's scorned me for being an artist.
Nobs and nose rings, no. Tattoes, well ----

hehehe! Not any more. Tattooed at 48 during mid-life crisis. :-)
