Default Jose Andres(Made in Spain) made a nice omelette

4 eggs whisked, lots of cubed cheese added. I'm not sure of the exact cheese as I came to the show late; it could have been a Manchego?
In a hot pan with oil, add a thick slice of Sobrasada sausage. Brown, and flip. After a minute or so, add the egg mixture. Move it around somewhat. Then flip the whole thing and cook a bit more. This omelette was not folded but after the flipping it was plated. It looked very appetizing.
