My husband won't eat sweet potatoes, winter squash, or cooked carrots. He just doesn't like the taste and/or texture. I never used to like sweet potatoes, but I blamed it on childhood experience with candied yams, which were basically mashed sweet potatoes with marshmallow topping. Sorry, but I still kind of grimace at the memory of that abomination. I never used to like squash until about 10 years ago when my son's girlfriend suggested adding curry powder to it. The older I get, the less I like cooked carrots. For some reason though, if we really like a particular food or flavor, we just cannot believe that others do not like it. Really, its good, you have to like it! If I ruled the world ice cream would come in four flavors, apple pies would have raisins in them, farmers would not grow kale, spinach, or radishes. I just don't understand why everyone does not agree with me. |

Anyway, they were fried and when almost done they had a very like syrup with them. It was a very small amount and just very lightly sweet. Ugh. Boiled sweet potatoes just sounds wrong. I like them baked just like I bake russets. Rubbed with butter (I suppose you could use oil), the skin sprinkled with salt. I treat them just like any other baked in the jacket potato. Split open, sprinkled with S&P, butter and sometimes sour cream. Jill |

Sweet potato fries don't have to be limp. If cut into shoestrings and deep fried they're quite tasty! Unfortunately, most restaurants serve them thick cut like "steak fries" and don't cook them long enough (or in oil not hot enough) to get very crisp. Jill |
