My mother used to fix fried sweet potatoes. They were large slices, not
like French fries, more like medallions. Anyway, they were fried and when
almost done they had a very like syrup with them. It was a very small
amount and just very lightly sweet. I've never tried to duplicate the
recipe.

I can tolerate them in soups and stews and maybe one or two in a beef
roast. But no plate of carrots as my side dish, please. I do like
raw carrots and carrot salad, though.
