Default Hojalda, Merida style

Rick Bayless is torturing me! If you are Facebook, just take a look at what
he posted and how good it looks!

But no recipe, Rick. This is wrong. Maybe he will post it later. I did a
search and came up empty. I see hojaldre which is a Panamanian fried dough.
And I see this:

The description sounds similar to what he pictured but no recipe.

Looks like puff pastry stuffed with ham and cheese, brushed with an egg wash, with a heavy dose of sugar(!). Looks simple enough. Looks like the pan has a layer of corn husks but I'd use parchment.
