Unless fish *says* sashimi grade, which means that it has been frozen
in the way that kills the worms, it should be cooked thoroughly. Where
you live it's less likely that people do stupid things with fish.

This place is filled with hard core fishermen. What else it there to do on a rock in the middle of the ocean? Cooking fish thoroughly sounds like overcooking if you ask me. I never cook thoroughly - just perfectly.

I buy my sashimi fish at a local Japanese market, and with all the
sashimi-grade offerings, none explicitly say "sashimi grade" on them.
In fact, I'm not sure I've ever seen it. It would be appreciated
certainly, but in this case it's a foregone conclusion.

I've concluded that "stupid" seems to be ubiquitous, despite
demographic variations in education and wealth.

IMO, best to cook your tuna. Tastes better and it's safer. I've eaten
"caught that morning, not frozen just put on ice, tuna steak. Spiced
and cooked to medium rare. Very nice.

My daughter and friends caught them that morning out at sea so I did
know the origin of what I had.

Seared ahi is wonderful stuff. You get a block of sashimi grade ahi and
rub some oil on it, add some salt, and a liberal amount of black pepper.
Sear at high temperature on all sides. Slice and serve. If your fish is
fresh and you don't overcook it, it'll be like the most wonderful beef
you ever had.

too bad, I kinda enjoyed it. OTOH, I was as hungry as a bear.

Live is like that - sometimes you get seared ahi and sometimes you eat
bowl noodles.

I would recommend the prawn flavored chips if you like to deep fry.
Those things are a lot of fun! These guys are frying the chips in oil
that's not hot enough. The chips should explode in colorful puffiness.
