I buy my sashimi fish at a local Japanese market, and with all the sashimi-grade offerings, none explicitly say "sashimi grade" on them. In fact, I'm not sure I've ever seen it. I've eaten "caught that morning, not frozen just put on ice, tuna steak. Spiced and cooked to medium rare. Very nice. My daughter and friends caught them that morning out at sea so I did know the origin of what I had. |

You get a block of sashimi grade ahi and rub some oil on it, add some salt, and a liberal amount of black pepper. Sear at high temperature on all sides. Slice and serve.
