Default Dinner yesterday 3-26-15

- "Lamb shoulder arm chops"- spiced, pan seared
then cooked to medium rare
- Mashed potatoes with turkey gravy
- Fresh white corn cut off the cob

I also deglazed the pan with a little water and added that to the
gravy. A simple but very nice meal.

I made White Castle Casserole. I had a piece of that with the leftover
haricot verts. Husband had both of those things plus cooked carrots and
potatoes. Not sure what Angela had but she told me that she did eat
veggies. She is big into eating hummus, cottage cheese and raw veggies
these days.

yesterday was soccer practice plus two birthday parties -- not a lot of
time for home cookin'

but we managed - I personally ate bacon, eggs, and toast for breakfast,
a salami sandwich for pre-lunch, a cheeseburger with a kosher dill pickle
and leftover fries from the gyros place for post-lunch, and leftover
mini-pizza from BJs (which was better reheated in the toaster oven than
in its original presentation)

right now I'm cooking up a sausage ragu with my experimental sweet
Italian sausage made from pork loin -- the main problem being lean
sausage could be dry, but not in a sauce

Very nice indeed.

I had grilled chicken breast on a bed of romaine, dressed with
a vinaigrette of lemon juice, garlic, a little Worcestershire sauce,
a shake of Tabasco, and extra-virgin olive oil. A whole-grain
dinner roll completed the meal.

Yesterday wasn't 3/26

I baked chicken thighs, first dredged in breadcrumbs which I seasoned
with with pepper and some Mrs. Dash garlic & herb blend.

Served with egg noodles (cooked in chicken broth) and lightly steamed
zucchini.

This came out really good.




3 TB olive oil

1 medium onion, cut to largish pieces

5 small carrots

1 lb bone in lamb shoulder

3 cups brown gravy (I actually used 3 cups water and 1 packets brown
and 1 mushroom/brown)

1 medium turnip




Sweat the onions in the olive oil to translucent but not browned. Add
the lamb and brown the steaks on each side for about 3 minutes each.
Peel and chop the carrots to 2 inch pieces while the lamb browns then
the turnip gets peeled and chopped to smallish pieces. Add the
veggies, gravy packets, 3 cups water, and Rogan josh seasoning to taste
(go light and add more later as this is fairly spicy stuff). I started
with 1 TS, later added 1/2ts more and 1/2ts Garam Masala.

Yes and best i can tell, a subset mix of spices that enhanced an aspect
I wanted more of for this mix.

I grant there is cheat with the gravy packets but the rest it pure
cooking

down ;-)

Grin, it was gone almost as soon as it hit the plates.

There is something magical on brown gravy when it hits lamb and is long
slow simmered with curry.

Gravy packets are like powdered eggs. Putting that crap on lamb is nutty.
