I started the month with some "barbeque kits" that I had made up after
a shopping spree to FoodMax. Foodmax sells all of its meat in huge "Walton Family" size packages. It's cheapest of all, but you get a month's supply by the time you get the pork, beef, chicken triangle done. Each barbeque kit ended up with: Pork chunks, thin sirloins for fajitas, two Italian sausages, and chicken drumettes, just enough for two. Too lazy to deal with the barbeque, I decided to roast/braise a mixed grill instead. Worth a try, I thought. I Salted/Peppered/Season-Salted the meat, sliced 4 or 5 nicely sized shallots and 4 cloves of garlic. After browning each meat according to its size (started with the pork chunks), I threw in the shallots and the garlic, some broth, a little water, and threw the whole pan in a 350 degree oven. The fajita steak was a little thin, so, to prevent overcooking, I put a filling of shallot and garlic and rolled it up. After a little browning, the roll didn't need a toothpick or string. It went in last. After about 35 minutes, the result was amazing. Everything was juicy and tender. The Italian Sausages provided just a lovely, but not overwhelming seasoning for everything, and the pan juices were delightful on freshly cooked rice. Ate a Fajita roll for lunch today, on a cheese/onion bun from Safeway. With sandwich spread. Wow. |
