Default Italian Stuffed Chicken Breast

I liked the look of this recipe but need help with a couple of the
ingredients if anyone would be so kind.

Of what does ' Italian cheese blend' consist?
and what do they mean by 'spaghetti sauce'?


1 1/2 cups shredded Italian cheese blend
1 clove garlic, finely chopped
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 cup grated Parmesan cheese
1/2 cup Italian-seasoned bread crumbs
4 boneless, skinless chicken breasts
1 egg, well beaten
1 cup spaghetti sauce
1/4 cup shredded Italian cheese blend, or to taste (optional)

Is this a recipe for Chicken Parmesan?

The basics of Italian cheese blend would a combination of Asiago,
Romano and Parmesan. We buy it already grated and mixed in tubs in
the deli section. There are bags of shredded Italian mix that add
more types of cheeses that will melt, like provolone, mozzarella and
fontina. Since you have to buy all the cheeses separately, I'd pick
my favorite grated cheese and buy just that one + buy slices of
provolone to lay over each piece of chicken and call it a day. Most
people like stringy melted cheese for this dish, so if you have any
mozzarella - use it. Mozzarella di bufala is not optimal for this
recipe (see the Serious Eats explanation below).

season the tomato sauce, they used the wrong terminology. Spaghetti
sauce is a term for pre-seasoned tomato sauce. I'd season crushed
tomatoes to my taste. You like passata, so season that to your taste!

Hm. I was going to make chicken (thighs) today, but was
unenthusiastic about my usual chicken preps. Thanks for the
inspiration! I have all the ingredients to do my version of that
recipe... except my chicken won't be schnitzelized. I skip that step.
If you plan to fry your chicken, then please read Serious Eats first.
FYI: If you can't buy buttermilk, (in my experience) kaffir is an
excellent substitute, but plain yogurt will do in a pinch.

Many people just use jarred or canned spaghetti sauce.
It's TIAD though. Make your own sauce or at least
enhance the prepared stuff.

I know both very well and keep mozzarella in the freezer for cooking.

You inspired me! I added a little pesto to a puddle of EVOO and
coated the chicken thighs with it. Cheesed it up, baked for 10
minutes at high heat, then added some shredded quattro formaggio and
baked another couple of minutes until the cheese was well melted.
Served it with a lightly dressed tossed salad, cellentaini and well
seasoned tomato sauce.

In the U.S.A., "spaghetti sauce" refers to commercial jarred (or tinned)
Marinara (meatless) sauce, sometimes with a few minor additions. It is
pretty bland as sold, so we often add extra garlic, basil, oregano, wine
or whatever to make it more palatable.

Oops sorry, I was referring to the mixed cheese I never buy ready grated
so perhaps that is why I haven't seen any. As for spaghetti sauce, I make
my own anyway so wouldn't be buying canned stuff)

I used to buy it occasionally until the guy from Garlic Jim's was
instructing a new employee. He said that you need to put the parmesan on at
the last minute or it would get hard. So I no longer buy the mix.

I wouldn't buy grated cheese, but I would have been interested to see the
mixture and would buy small amounts to grate myself.
