1, the rice into 1-2 eggs, join the amount of salt gently stir to mix;
2, tomato, green peppers, ham and cut into small grain, and a little black pepper; 3, pot, stir well internal heating oil into the egg of rice fire to dry fry dishing out, at this time, you can see the of grain of rice son changed into the golden suit. 4, the pot to add a little oil until shallot ginger, add 2 to 3 through, fry in uniform stirring out of the pot. |

Herewith is a cleaned-up version: EGG-FRIED RICE, MENGASD STYLE 1 to 1 1/2 cups steamed long-grain rice (leftover is better than freshly-steamed for this recipe) 1 to 2 eggs Salt to taste 1 tomato, finely diced 1 green pepper, minced 1/4 pound ham, minced Black pepper to taste cooking oil, anywhere from 2 tablespoons to 1/4 cup 1 shallot 1 tablespoon finely-minced fresh ginger 1. In a bowl, combine the rice and eggs. Sprinkle with salt and gently mix together. (You don't want to mix too vigorously or you'll break up the grains of rice.) 2. Add tomato, green pepper, ham, and black pepper. 3. Place a large shallow pan or wok over medium heat. Add oil to coat the bottom of the pan and allow to heat for a minute. Pour rice-egg mixture into pan and stir to cook the egg through: If done correctly, the egg will coat the grains of rice, forming a "golden suit" for the rice. 4. Remove the rice from the pan, raise the heat to high, and add a bit more oil. Cook the shallot and ginger until opaque and sizzling. Pour over cooked rice. Hope this helps! Bob |
