The thread about the leftover rice promps this:
Glorified Rice Recipe By: Posted by Barb Schaller to rec.food.cooking, 10-6-2010. Summary: From my big old Pillsbury cookbook at the request of a friend - I brought it a potluck. 1 cup heavy cream 2 tablespoons sugar 1/2 teaspoon vanilla extract 2 cups cooked rice 2/3 cup drained crushed pineapple 1 banana, sliced and quartered maraschino cherries Beat cream in small bowl until stiff; blend in sugar and vanilla extract. Combine rice, pineapple and banana. Fold in whipped cream. Spoon into serving dishes; garnish with cherries. Chill. Tip: One cup miniature marshmallows may be substituted for bananas. (I'm thinking the bananas would darken. Not pretty.) Tip: For fluffy grains of rice, drain rice in colander or sieve and rinse with hot water. It is a 'glorified' version of rice pudding, isn't it? Sweetened rice with sweetened pineapple, banana or marshmallows and maraschino cherries. Not my idea of a main course, although TMU would probably enjoy it as such LOL. |

Dessert looks right to me, or maybe baby food. lol Seriously, though, it looks pretty good. I'm not sure I'd sub marshmallows for bananas. Maybe if the bananas were mixed with the pineapple and a little lemon juice before mixing with the rice? When you brought it to the potluck, did you use bananas or the mini marshmallows? |

Dessert or salad; I've seen it served as either. Drain pineapple - reserve syrup. Combine rice, water, syrup and salt in saucepan. Mix just to moisten rice. Bring to boil. Cover and simmer 5 minutes. Remove from heat. Let stand 5 minutes. Add marshmallows, pineapples, sugar and lemon juice. Cool. Fold in Cool Whip. Chill.

That's not a word normally used by me other than in the medical sense or the oceanographic sense :P Surely the sweetness can be regulated? TMU would undoubtedly sprinkle more sugar on top to suit her sweet tooth ![]() |
