So I cooked this sucker tonight. Spit it lengthwise and trimmed to fit in
my baking dish. Salted the halves and after 1 hour poured off a lot of water. So I scooped out the meat, sautéed some garlic, onions then added hot Italian sausage, beef and the zuke meat. Added basil, oregano and parsley plus parmesan and salted to taste, cooled, added to eggs and some bread crumbs and parmesan. Stuffed the zukes, set in baking dish with tomato sauce and cooked 30 minutes., Added mozzarella cheese on top and baked 15 more minutes For such a tough and fibrous zuke it was sweet and tender and delicious. Awesome dinner! And I am not at all a squash fan. Paul |

My thought exactly. I think I'll grow another one that size and make some kick ass zuke fries. I will need a much bigger pot and a few gallons of oil first. Paul |
