Default A good use for leftover oil from panfrying chicken

Fried potatoes. I cut up and parboiled some Yukon golds, then fried
them in the chicken pan from two days ago. Since I had marinated the
chicken pieces in cayenne, the oil and leftover browned flour crispies
were nice and hot.

Two-day old used frying oil sounds yucky to me, as does the dirty pan
lying around for two days. At least he could filter the oil before re-
using it. -aem

Oil that has been covered for 40 hours or so sounds yucky? Why?
Filtering it would have removed the crispy browned flour.
