A good use for leftover oil from panfrying chicken

Fried potatoes. I cut up and parboiled some Yukon golds, then fried
them in the chicken pan from two days ago. Since I had marinated the
chicken pieces in cayenne, the oil and leftover browned flour crispies
were nice and hot.

Two-day old used frying oil sounds yucky to me, as does the dirty pan
lying around for two days. At least he could filter the oil before re-
using it. -aem

Oil that has been covered for 40 hours or so sounds yucky? Why?
Filtering it would have removed the crispy browned flour.

Please do not post here anymore as you obviously haven't read the
Charter. It specifically states that you are not allowed to post in
this NG.

Yes, but it also specifically states that you are not to be the Beavis.
