Default Using up the leftover chicken

I had most of a chicken left over today, so here's what I did:

Breakfast: Egg foo yung with chicken, bean sprouts, sweet jalapeños, onions,
and sweet & sour sauce served over rice.

Lunch: Waldorf salad (chopped apple, celery, mayo, and a bit of blue cheese)
with chicken added, spooned into lettuce cups.

Wow, you've already had lunch? I love egg foo yung (chicken, pork or
just veggie). Hope you enjoy that salad

I work the night shift. Breakfast takes place about 5 PM and lunch takes
place about 11 PM. The salad was good!
