I've had fajitas with grilled portobello mushrooms. Simply divine. And
yes, that was when I still lived in the OK/Texas southwesty area. Can't
say that I've seen them on the menus out here, but I haven't found a lot
of Mexican restaurants that I like here (strange, that).

Also, wouldn't fajitas covered in cheese be more like a wet burrito or
flour tortilla enchilada?

I prefer Oaxacan Mexican, but there's no "Mex" that I don't like. BTW,
I always thought that the diff between carne asada and fajita was that
fajita was smoked.

Preferably grilled over a smoldering fire of nothing but hickory wood,
for hours while we drank beer and tried to keep the fire going just
right.

Still the best BBQed chicken I ever ate Bryan!

the 'covered with cheese' part seems reminiscent of chi-chi's, a place that
always gave me the willies.

I did some the other day, using hickory as the base, but adding cherry
to smoke. I've got enough fruit trees now that I'll always have
plenty for smoking.

Apple wood is good fior smoking too. The only really good thing the
Ex's drunk-assed father ever cooked was a turkey he smoked in apple
wood. YUM!
