I've had fajitas with grilled portobello mushrooms. Simply divine. And
yes, that was when I still lived in the OK/Texas southwesty area. Can't
say that I've seen them on the menus out here, but I haven't found a lot
of Mexican restaurants that I like here (strange, that).

Also, wouldn't fajitas covered in cheese be more like a wet burrito or
flour tortilla enchilada?
