If the OP can get his/her hands of Adolph's meat tenderizer or something else with papain in it - that's the way to tenderize tough meat. Of course, the best way is to start off with a piece of meat that's not tough. Tough meat should *not* be expected to end up like tender meat, 'cause it just ain't gonna happen. Shoe leather is shoe leather. Even if you beat it into submission, it's still shoe leather - although it might not take as much chewing to swallow it without choking to death. -- I never worry about diets.
