Default pancakes

As my partner was called out to a road accident I only had about 20
minutes to cook him breakfast.
He loved them

Ingredients:
half cup of flour
3/4 cup milk
2 eggs

I Sifted flour into a bowl
Lightly beat the eggs and stir them into the flour until the mix is
smooth.
Slowly add milk and stir untill a nice smooth batter.
Leave the mix for 30 min.
Heat a pan and grease well.
Have hotplate on medium.
Pour a couple of tablespoons of mixture in and swirl it to make it
round.
When it bubbles a bit on top, flip.
Cook reverse side, remove.
stack cooked ones on a plate as to stay warm.
They were thin like crepes and sweet.

Sam liked them with sugar.

No salt, baking powder or melted butter?

You had 20 minutes to cook breakfast but let the mix rest for 30
minutes. How did that work out?

There's no leavening so letting it rest doesn't matter anyway, they
won't be cakes. -aem

Eggs are often used as a way to leaven. I don't use baking powder in
my souffle.

Is that leavening? I thought leavening was the production of gases that
cause something to rise, like the CO2 produced by yeast or through the
chemical reaction of baking soda or powder. Beaten egg whites forms air
bubbles that expand a bit and give a lighter texture to the product, but
it doesn't produce the gas.
