Canned tuna, salmon, sardines.

Canned bamboo shoots, water chestnuts, hearts of palm, artichoke hearts,
and other fun veggies that can be eaten at room temperature. Assemble
as a side salad to go with canned fish.

Roasted nuts.

Unsweetened coconut, freeze dried berries. Heavy cream in those
stabilized cartons that don't have to be refrigerated. Soak the berries
in some appropriate alcohol (assuming you can drink). Whip the cream
and fold in coconut and/or berries for a sweet treat.

I'll think about some more.
