Evelyn, this is not food related but with the rain on top of the crazy 4
feet of snow, has there been any word of flooding in the Catskills? I remember that horrible Janary 1995 flood that devastated Margaretville, Walton and other communities. I have seen nothing in the newspapers. I trust you are OK and did not have any powe outages this time around. Wendy |

All the heavy snows that inundated the areas south and west of here were only a few inches. The huge rains and flooding that is all over NJ is not here. We got some rain but I have seen far worse. We know we are very fortunate to have escaped not only the flooding and heavy rains, but the awful winds that knocked down so many trees everywhere else. No power outages either, though my neighbor was out for several days, we were fine. Thanks so much for asking. Tonights dinner was a Foreman-grilled Lamb patty and a big salad of fresh baby lettuce, with cukes, tomatoes, olives, and a nice vinaigrette dressing. Hubby (who doesn't eat lamb) had last nights leftovers and his half of the same big salad. Yesterday I took some nice fresh codfish and cut it into serving sized pieces. First I sauteed onions in a little olive oil till they were nearly caramelized, then added a few cloves of chopped garlic, some oregano, basil and parsley, salt, pepper and a pinch of hot pepper flakes, along with a can of tomatoes and a splash of marsala wine. When this had cooked together for a few minutes, I put the pieces of codfish into it carefully, then covered it and simmered the cod till opaque, then served them with that wonderful fragrant chunky sauce. It was totally awesome and low fat, low carb and really good. I will definitely do that again! It was even still good today. Only trick is to keep the fish from falling apart while it is being cooked and served. Careful handling took care of that just fine. I have been somewhat unwell lately. Bad back problems, recurrence of Lyme disease, cellulitis in both legs, and all this is happening at the same time. I have not been having fun to say the least. The good news is that I am coming around the bend and starting to feel a little better this past week. Still have another batch of antibiotics to get through. I didn't like the Victoza. It is injected, very much like Byetta, but you only take it once a day. It makes me feel cold all the time and seems to stop my digestion from working well. It does make you feel a little nauseous.
