Default Need dips recipes...

There's an evening barn dance organised by the local Diabetes UK group
in a couple of weekend's time, and I promised I'd make dips - someone
else is bringing veggies as dippers - for up to 100 people.

I was thinking of doing hummous - I have a chick-pea mountain in my
pantry already - and possibly salsa, and a cream cheese/yoghurt dip.
They've got to be easy and quick, and do-able the day before - I'm
currently spending my leisure time, including the day of the dance,
running my eldest round university Open Days.

Any ideas?

Sour cream or cottage cheese with tuna. As well as the hommus and salsa.
Guacamole. cucumber in yoghurt. Canned crab meat and sour cream.

A favorite I used to make isn't so much a recipe but something I did by
taste. Start with some cottage cheese then add some sharp cheddar shredded
and whiz it up with an immersion blender. Add some black pepper and finely
chopped purple onion. This was served at a party I went to with black
bread, but I like it with vegetables.

If you have a crockpot you can make espinaca con queso. You can do part of
this the day before. Start with some processed cheese food (Velveeta in
this country) and some cream cheese. I use about half of each. Cut it in
cubes. Mix in some salsa to thin it down. This part can be done the day
before. Then heat it in the crockpot or on a low heat on the stove. When
the cheese is melted, add plenty of finely chopped spinach and stir it
through. The spinach cooks in about a minute.

Another thing I used to eat a lot of was bean dip. This could be done in
the crockpot too. I used refried beans either from a can or made from
scratch. To make them I used cooked pinto beans with a bit of olive oil
added and then mashed them with a potato masher. Warm up the beans, add
some salsa, shredded sharp cheese, maybe some chopped onions and hot peppers
if you want. Serve with chunks of bell pepper to dip into it.

One thing I never tried (didn't appeal to me) that they used to make where I
used to work was a block of cream cheese on a plate topped with a can of
small shrimp and a jar of cocktail sauce. This was served with crackers
though. Not sure how well it would do with veggies.

Texas Caviar is always good but not sure if you can get the ingredients
there. There are plenty of recipes online but here is one:

I'm not really sure what Accent is. Some kind of seasoning. This I know.
I suspect it might have MSG in it. I would leave that out.

Nicky I have a friend who makes a fantastically delicious bean dip. She
takes cooked or canned beans, usually pinto.... and mashes them thoroughly.
Mix with sour cream and hot salsa. Blend well.... and it makes a lot, but
it is so good that it goes. Serve it with tortilla chips.

Thai Peanut Curry (Nam Jim Tooa), makes about 3-1/2 cups

Ingredients:

3 Tbs coriander seeds
2 Tbs cumin seeds

3 small dried red chiles
2 pieces kah (galanga)
1/4 cup warm water

1 stalk lemon grass, bottom 6" only
1/4 cup finely chopped yellow onion
2 Tbs finely chopped garlic
1 tsp shrimp paste
1 Tbs ground white pepper

2 Tbs vegetable oil
4 cups thick coconut milk

3 Tbs fish sauce
1/4 cup granulated sugar or Splenda
1-1/2 cups ground roasted unsalted peanuts
[NOTE: pieces a little bit larger than grains of sand are about right]

Procedu


Roast the coriander and cumin seeds in a dry wok or skillet over medium
heat until light brown, about 5 minutes, stirring frequently. Set aside.

Remove the stems and seed from the chiles and soak the chiles and the kah
in the warm water for 15 minutes. Drain, discarding the water.

Chop the chiles, kah and lemon grass finely. Pound or grind them, the
onion, garlic, shrimp paste and pepper in a mortar or blender 'til smooth,
adding a little coconut milk if needed to form a smooth paste.

Heat a wok, add the oil and swirl over surface. Add the paste and stir-fry
until it darkens and is fragrant. Add the fish sauce, sugar and ground
peanuts. Stir to mix well. Add 1/4 cup of the coconut milk and stir over
moderate heat 'til the mixture thickens. Continue adding the coconut milk
1/4 cup at a time.

Use immediately or store in the 'fridge up to 2 weeks or in the freezer for
6 months.

You can make a hot dip with cream cheese. I make a series of crab, artichoke, spinach, and sausage dips using baked cheese.

Whip cream cheese, grated or pureed onion, worchestershire sauce, dijon mustard, salt and pepper with sauteed spinach that's been squeezed to drain ALL liquid, or crabmeat, or shrimp, or artichoke hearts.

You can make a cheddar cheese queso-type dip by making roux, adding milk to make bechamel, melting cheese, then adding sauteed ground sausage.

Let your imagination be your guide.

The 7 layer dip is good too. Now what all is in those 7 layers? I can
think of beans, salsa, guacamole, sour cream, cheese, lettuce and onions.
Does that sound right?

I oftn use the ketchup(tomato sauce) adn horseradish with a spot of lomon
uice and worcestershire sauce that is usually used in teh US for shrimp
cocktil, as a dip for vegetables, also, my mother's old fasioned Russian
dressing, just ,again, ketchup adn mayonaise mixed o a nice pink, again a
little lemon doesn't hurt.

these are my emergency food for unexpected company.

i make a dip that is an easy base,

16 oz sour cream
16 oz cream cheese
1 pkg lipton onion soup mix

soften crem chese blend in sour cream add soup mix and let sit over night

variations

taco seasoning mix package or meat loaf package

if the MSG in these bother you put in your own spices.

also you can dice onions, garlic, mushrooms or shred any other veg to put
in.

meats can be added but cube it very small or shred it, ham beef and corned
beef or pastrami work well, the base is the big deal. since i count
calories i use Fat Free on the cream cheese and sour cream and i have
substitued ricotta or cottage cheese in a pinch and just blended
thouroughly... and i forgot the salad dressing packages like ranch or
itilian work as well.

i like to make a dip with hidden valley ranch dip mix...the carbs and cal s
are low enough to not bother me at all ever.

plus it tastes awsome...i like to mix it with plain yogurt and dried chives
and dip veggies etc in it..even my wife likes it and she hates yogurt

of course with sour cream its the best....

other good dips are roasted peppers and onions and garlic roasted with olive
oil in the oven till dark and then blended with a bit of olive oil..maybe a
smoked chipotle pepper for heat and mmm whats that taste.

but lots of people like hummus...you could even toast some low carb pita
bread spears along with the veggies to dip in...just cut em small and one
half of the pocket each triangle

Actaully now that you have prompted my meory, tipping a bottle of ranch
dressing into a bowl is an excellent vegetable dip. Ditto a blue cheese one.

I always add a bit of bacon grease to my refried beans...perks them up a
bit. I usually add some salsa to the beans, and Mexican Cheese...and Nuke
it.

if you can find real ones and not hfcs/chem filled ones they should be low
carb and ok calorie..especially blue cheese which should be cheese oil
vinegar and cheese.

most dressings are spices and vinegar and oil or spices and sour cream. or
real mayo..low carb..its when they add the junk to to that they can be bad.

Thanks for the great response, guys! I think I'm going with hummous,
spinach dip, and salsa - that sounds like a cool colour combo, and can
mostly be made the day before. Plus I have most of the ingredients,
which always helps Now the decision is how many of the pretty
violent chillis I'm growing this year will lift the salsa just enough!

mayo, sour cream, yoghurt............. make it 24 hours before the event
so the flavours blend well

Is this dried soup, Kate? I use Knorr stock varieties, but I haven't
had the soup for years. I see the local supermarket does Asparagus or
Chicken/Leek flavours, which sound promising...

There is one dip using a Knorr soup mix - I think it is a vegetable soup,
with a package of frozen chopped spinach, and of course one or more of the
usual mayo/cream cheese/sour cream items to mix it up with. It is
absolutely delicious. They often serve it in a round pumpernickel bread
that has been hollowed out as a bowl, and the parts you hollowed out, are
placed around it to dip with. If you look on the package of soup mix, the
recipe is on it. I would look for it, but I don't happen to have that mix
in the house at present.

yes, the dried soup in the paper packet by Knorr Swiss

i know that the Lipton's versions are used here very often, but Knorr
just is a 'cut above' and comes in better flavours

imagine, Asparagus/Yoghurt dip! oh............ i want some now
