Barbecue (alt.food.barbecue) Discuss barbecue and grilling--southern style "low and slow" smoking of ribs, shoulders and briskets, as well as direct heat grilling of everything from burgers to salmon to vegetables.

That's it then... I'm doubling all my recipes to 400 PPM

I can't think of another food fallacy that's gotten as much
acceptance as the nitrate/nitrite scare. It's difficult to
have a reasonable discussion with most people on the subject
because of all the misinformation.

When you throw into the mix the "Meat is Murder" crowd
and their hidden agenda it becomes a lost cause.

Rytek Kutas covered the subject quite well in "Great Sausage Recipes and
Meat Curing" (1984), pp. 43-4.

One caveat, you should not give nitrite cured meats or other
nitrite/nitrate rich foods such as spinach, beets and cruciferous
vegetables to young infants (under 8 months) as the replacement of
their hemoglobin from the foetal variety to the regular type found in
children and adults may not be complete until then.
There's never been research, to my knowledge, that the nitrite levels
in cured meats do anything to anyone older than that. A bigger concern
with things like sausages is the high saturated fat content, and its
potential for elevating blood LDL levels. Anyone concerned about that
should first look to eliminating trans-fats first, since they're far
worse that pork fat. There's also a natural supplement that actually
outperforms the statin drugs at lowering LDL, and actually increases
HDL levels. Go he http://www.ncbi.nlm.nih.gov/entrez/query.fcgi
and do a search on POLICOSANOL
I just ordered some a few days ago from
http://swansonvitamins.com
because they had the 20mg. size BOGO free and free shipping on orders
over $50, and no, I don't work for Swanson.

This is very interesting stuff. Here's the abstract of the original article
yahoo news refers to,
published by the NIH Journal of Clinical Investigation.
