One caveat, you should not give nitrite cured meats or other
nitrite/nitrate rich foods such as spinach, beets and cruciferous
vegetables to young infants (under 8 months) as the replacement of
their hemoglobin from the foetal variety to the regular type found in
children and adults may not be complete until then.
There's never been research, to my knowledge, that the nitrite levels
in cured meats do anything to anyone older than that. A bigger concern
with things like sausages is the high saturated fat content, and its
potential for elevating blood LDL levels. Anyone concerned about that
should first look to eliminating trans-fats first, since they're far
worse that pork fat. There's also a natural supplement that actually
outperforms the statin drugs at lowering LDL, and actually increases
