Default 2007 Perrot Minot Chapelle-Chambertin GC

I met a friend for dinner and he brought a bottle of 2007 Perrot Minot Chapelle-Chambertin GC to enjoy with dinner. I started with a glass of Ruinart Blanc de Blanc NV with oysters. The Ruinart was lemony, buttered toast and almonds, with just enough stuffing to hold up to the oysters. We enjoyed the Burgundy with a quail stuffed with veal and truffles (yum). The wine was dark red in the glass, fairly bright nose of iron/minerals, cassis, blueberries and plums. Mid weight on the palate, lots of spicy black and red fruits finsihing with a distinctive mineral note. Needs time but delicious now. A
