Default dosa (indian cuisine)

My understanding is that dosa(a sort of indian rolled up sandwich thingy)
are made by first souring the batter made for the wrap.
Is this true?
If so, does anyone here have any recipes or guidance?
I'll admit, I have only ever had these at restaurants but
do like them enough to try at home.
