Default Keeping dormant sourdough

With the teaching term starting, how do I keep my sourdough in a happy
state of dormancy? And will wholemeal and rye starters keep too? If I
try keeping them in the fridge, they burst out of containers and grow
like The Stuff. Any tips?

Many thanks,
