if you haven't done so earlier. It's a presentation of how I made
bread from very slack sourdough using a chome bowl.

I tried an experiment today with interesting results I will pass on
for your consideration and comments.

I put the slack dough in the bowl and sealed it with aluminum foil
which I pushed down at the center so I can see when the dough puffs it
up after rising to the top of the bowl. I let the dough rise in an
80-85F oven with the light on for about 4-6 hours until the foil
starts to puff up. Then I bake it for 45 mintues at 450F.

This time I leave the bread in the bowl and leave the foil on top for
the full baking cycle. I take it out and let it cool, pop the loaf out
and put it back in the oven at 550F for 10 minutes to form a brown
crust.

The thing I discovered is that the bread is very fluffy in texture.
The crumb is very springy in that it acts like the texture of a
sponge. Press in on it and it springs back. It's almost like
conventional store bread in texture but the texture is full of big
holes like that image on the web page.

Apparently by sealing the baking pan I prevented moisture from
escaping and that resulted in the spongy texture.
