Does anyone know whether the bread machines on the market have vertical or
spiral mixing action for their kneading cycles. The only spiral , home size that is, mixer that I have seen is quite expensive. Bread machines can be quite cheap. I am thinking of the possibility of using one for certain kinds of dough. What do people know about them? Ellen |

What do people know about them? Ellen > Are you talking about ordinary "automatic bread machines" (ABM) like the Breadman and Zojirushi? All of these I am familar with use 1 or possibly 2 simple paddles that rotate around a central shaft. My experience with a couple of different models over several years is that there is no better way to knead dough than with an ABM. The major drawback is that it can only make one large loaf at a time. I rarely use my ABM anymore because I now make a weeks worth of bread at once in my large mixer. -- Steve W s (dot) wal (at) verizon (dot) net |
