POLISH RYE BREAD

---------------------------------------------------------------------------

1 c. scalded milk
1 c. boiling water
1 Tbsp. lard
1 Tbsp. butter
1/3 c. brown sugar
1 1/2 tsp. salt
1/4 yeast cake, dissolved in
1/4 c. lukewarm water
3 c. flour
rye meal

To the milk and water, add lard, butter, sugar and salt.
When lukewarm, add dissolved yeast cake and flour. Beat
thoroughly. Cover and let rise until light. Add rye meal
until dough is stiff enough to knead. Knead thoroughly. Let
rise. Shape into loaves and let rise again. Bake for 55 to 60
minutes at 375 degrees.
