Mike, well I started it this morning. It is rising now. When you take a
look at this recipe, there might be a typo in the first paragraph listed
below, adding water twice. I thought so at the time, so added the olives at
the end after kneading when "add in remaining ingredients to blend" (second
paragraph). I really knew better, but wanted to obey the recipe. The
olives didn't incorporate very well, but mixed in as best as could. I'm
sure it'll all turn out fine in the end...
Your recipe:
Combine water and starter in mixing bowl and mix to break up starter. Add
flour and water until mix comes together but does not clear sides of bowl
(4-5 minutes). Cover dough with plastic wrap and let sit 20 minutes.
then....
Remove wrap and add the salt. Mix well on low speed for 2 minutes. Turn
mixer speed to medium and mix 6-8 minutes more until dough snaps back
quickly. (Dough temperature should be between 68-74 degrees F). Add in
remaining ingredients to blend. (Some people think the chili pepper and
rosemary are optional.

I really need to go over that recipe again. I've changed it a good bit
for my own use since I put it on-line. And when I used it in that form,
I too was confused.
As far as I recall, I used weights on all the things that said
"ounces". However, the difference in the weight of an ounce of water
measured by weight or volume is pretty negligible. Of course, that is
not true with starter. So, you can go either way and then adjust the
dough until it feels right. It should be a soft dough, and it should
stay somewhat sticky. If you make it too stiff, the crumb closes up and
you lose rise.
