Default spreadsheet revised again

due to helpful comments from Felix and TG/Jim have done some more
revisions and taken the second sheet book recipe converter further

now the second sheet can calculate not only percentage formulas but
also quantities in units either starting with the dough total desired,
or the starter flour used

have to admit in the process discovered that there were some smallish
mistakes in the percentage calculations on the second sheet in the
previous edition

also added an area to the right on both sheets - scratch pad - that
remains editable so notes can be kept in the sheets

Hi Andy,

I like the scratch pad idea. Inspired. I like the second sheet too.
It's simple and clear. I like that you protected it so I can
confidently click around. Cool.
