Default Homemade Marshmallows

Request From:
Is it possible to make your own marshmellow? I imagin I could use egg
whites and sugar maybe. A recipe please

>From the Ultimate Candy Book

Cocoa Marshmallows

Vegetable oil for coating the pan
3 envelopes unflavored gelatin
1 1/4 cups water
2 cups granulated sugar
1 cup light corn syrup
1 Tbsp. vanilla extract
Cocoa Powder for dusting marshmallows
You can also use powdered sugar instead of the cocoa powder for dusting

Oil a 9 x13 pan and set aside. Sprinkle gelatin over 3/4 cup of the
water in large mixing bowl; set aside until the gelatin softens.

Combine sugar, 3/4 cup of the corn syrup, and the remaining 3/4 cup
water in a heavy medium saucepan. Place pan over medium heat and stir
until the sugar dissolves and the mixture comes to a boil. Clip a candy
thermometer to the inside of the pan and cook without stirring until the
thermometer registers 240F(soft ball stage). Remove from the heat and
add the remaining 1/4 cup corn syrup.
Using an electric mixer at high speed beat the hot syrup into the
softened gelatin in a large bowl by drizzling it in a slow steady
stream. Beat for 10 minutes or until the mixture triples in volume and
becomes very stiff. Beat in vanilla.
Spread the mixture in the prepared pan. Smooth the top as much as
possible using a thin, flexible spatula or icing knife dipped in water.
Set aside uncovered for 8-10 hours at room temperature or until the
mixture is cool and firm.
Dust a large cutting board with cocoa powder or powdered sugar. Sift
additional cocoa or sugar over the top of the mixture in the pan. Don't
skimp. Run a small knife around the inside edges of the pan. Invert the
pan onto the prepared cutting board. The mixture may still be a little
sticky and need coaxing out of the pan. Sift more cocoa or sugar over
the marshmallows once it has been unmolded.
Cut the marshmallows into 3=94 squares using a sharp knife or pizza
cutter. Dip the sides into the cocoa powder or powdered sugar. Shake off
any excess and store in an airtight container between sheets of wax
paper for up to 3 weeks.
