Chow-Chow

2 1/2 pounds green tomatoes
6 small cucumbers
2 red or green bell peppers
1 small cauliflower
1 bunch celery
2 pounds small white onions, peeled
1 pound green beans, cut in 1" lengths
3/4 cup salt
2 quarts cider vinegar
2 1/2 cups sugar
2 tablespoons celery seed
3 tablespoons dry mustard
4 tablespoons turmeric
1 tablespoon whole allspice
1 tablespoon freshly ground pepper
1 tablespoon cloves

Cut the tomatoes, cucumbers, red or green bell peppers, cauliflower, and
celery in small pieces. Combine with the onions and green beans. Cover
with 3 quarts of boiling water and the salt and let stand for 1 hour.
Drain. Rinse well in cold water and drain again. Mix the remaining
ingredients in a large pot and heat to the boiling point. Add the
vegetables and cook until tender, stirring frequently. Spoon into hot,
sterilized jars, fill with the cooking liquid, leaving 1/8-inch headspace,
and seal. If you wish, process in a boiling-water bath for 10 minutes.
