Having been to a local restaurant and tried their warm beetroot and potato
side dish/salad I decided to have a go myself and came up with this
delicious concoction ... do try it!

Warm Beetroot And Potato Side Dish

4 to 5 small cooked beetroot (diced into 1/4" cubes)
10 small salad potatoes cooked (diced into 1/4" cubes)
2 shallots (finely chopped)
3 cloves of garlic (finely chopped)
2 Tbsp light muscovado sugar
2 Tbsp sherry vinegar
1 Tbsp balsamic vinegar
1 Tbsp olive oil
1 Tbsp chopped parsley

Soften the shallots and garlic in olive oil, sugar and the vinegars until
just going slightly brown. Add the warm potatoes and beetroot, stir very
gently until all the ingredients are heated through. Add chopped parsley at
last moment as you place into serving dish.

This delicious dish is served either with cold meats or with a hot meal.
Suitable for vegetarians.
