Default Unripe apples?

Rec.food.cooking's resident preserves expert is temporarily missing, and
I've been referred to you people.

I have 4 small apple trees (2 Stark "Colonnade" and 2 "other") that are
bearing abundantly this year but I lose the battle with
squirrels/birds/generic varmints every year and I can't net the trees.

I've been told the greenies won't ripen indoors, so I wonder what can I do
with the unripe apples in order to take advantage of them before the
critters dispose of them.

All suggestions welcome, thanks!

try using them in chutney or use them with other fruits for jams (
green, that is unripe) apples are a good source of pectin.

hard green apples are rich in pectin and make good jelly.
you can also ferment them and make cider.
you can make jelly out of the juice and cider out of teh mash left over
from extracting the juice for jelly.
then you can compost the mash after draining off the cider.
