Default Canning Meat

Recently I canned some beef spare ribs to send to my brother in Afghanistan.

Had 7 jars total. One blew up in the pressure canner and today when I got
ready to send them out 2 of the jars had loose lids on them.

Figure I overfilled the one that blew up but don't have any idea what would
2 of them not to seal properly.

Any ideas?
