Default turkey jerky preheating

I have seen that the latest guidelines say that you should heat the turkey
strips to 160F before dehydrating for safety.

Ok, I'm fine with that, but how can I measure the temp since the strips are
cut thinner than the meat thermometer probe?

I have just been heating in a 250F oven for about 12 minutes. Is that about
right?
