Default Lamb Chops


Lamb chops are so easy to do and so tastey too.

I got a rack of lamb from Costco and cut it two chops thick on the small
end and singles on the large end. Heated a cast iron skillet white hot. A
bit of salt and pepper and into the skillet for a good sear on all four
sides. They were very juicy and rare to medium rare. Finished them with
fresh squeezed lemon juice. To me the flavors were explosive and the
effort was minimal. Sides of mashed potatoes and fresh garden salad with
a simple vinaigrette..and of course a nice red wine. TOO good!

I continue to be impressed with the quality of the meat and seafood at
Costco..glad we let Sam's go. OT: We also bought a car through Costcos..a
no hassle deal and way less that any local dealers quote.

Please , what is a "flap". I would have guessed it was flank
steak--but according to your post, they are two different things.?

I agree. I don't go all that often, so I try to stock up the freezer
when I do. Their thick cut pork chops, beef roasts and steaks are all
first rate. Good shellfish, too. Plus, their electronics section
keeps the DH happily occupied while I do some serious meat shopping.

Sounds good, but when I cook a rack of lamb I prefer to cook it whole. I have
tried cooking them several different ways and they have never turned out
badly. If I want chops, I just buy the chops, preferably loin chops. The
shoulder chops taste ok, but there tends to be a lot of fat and bone to work
your way around.

My sister in law swears by Cosco meats. I just have an aversion to shopping
that way. First of all, I hate having to buy a card to shop in their store.
They don't have a lot of the brands that I like. A lot of their stuff is sold
in bulk packages. I don't mind buying a few extra boxes of something that I
like and am going to use, but I hate having the variety imposed on me. For
instance, I like Breton crackers and buy them frequently. At Costco they came
in packages of three boxes, but three different varieties instead of three the
same.

Default Lamb Chops

Cotelettes champvallon
----------------------

Take 10 cutlets, season and colour them quickly on both sides in butter.

Arrange them in a deep oven proof dish with 9 ounces sliced onions
lightly cooked in butter without colour. Moisten with enough boiling
hot white stock to almost cover the cutlets and onions; add a small
clove of crushed garlic and a bouquet garni, and place in a moderate
[350 F] oven.

After 20 minutes, cover neatly with 1 lb. 5 ounces potatoes cut into
cylinders and thinly sliced, season and complete the cooking in the oven
basting frequently with its cooking liquid.

When the cutlets are cooked the liquid should be almost completely reduced.

Cotelettes d'Agneau Mirecourt
-----------------------------

Cut the cutlets very thin, season them and shallow fry very quickly in
very hot clarified butter.

Arrange them in a circle on a serving dish, sprinkle with a little fresh
squeezed lemon juice and the cooking butter after adding a pinch of
chopped parsley. Serve immediately.

pickjed you over the other specimens available.

Nothing wrong with rosemary...and the deer don't eat it.. so I have a
dump truck load of it in the front yard.

It like Sam's Club but better. It used to be Price Club..Warehouse thing
but the meat and seafood is good!

Whole is good too but cut into chops you get all the edges carmelized and
to me that adds some great flavor.

Yep don't like the card either but we saved enough on a Honda Accord to
buy a bunch of cards.

They have many name brand things like Hellmans mayonise and the A1
sauce come is a quart..actually 33 ozs. Most all of it is bulk.. and I
agree that some of the package sizes are TOO big, but the meat and seafood
is in a somewhat normal package. But, again you can't buy one steak..but
we never want just one anyway.

I just like shopping in Costco as entertainment, I know, lame.
I do understand why people wouldn't like the card ... hey, even
the free card from the supermarket drives people nuts. Now the
card is up to $50. Thing is, I have no trouble justifying it now because
I do save enough by using their American Express card to cover it.

In a way, though, that is a double whammy to the other stores where
I shop. Not only is it diverting purchases away from them, they are
essentially paying for my membership card, to boot. Oh, well, I paid
cash there all these years, I never got a discount for doing so.

Very true, and I know what you mean about the bundling of
different flavors in one package. Doesn't help when I really only
like the one flavor.

Costco and Tilia, made for each other. I really like Costco meat, and I
do like buying some meat in bulk. I like having meat in the freezer, just
pull something out every week.
