Tacos. Beef, with guac, salsa, cheese..the usual suspects And Mexican rice, which
I love making these days. Been using brown rice, which adds alot to the flavor and
texture, and is alot easier on the BG's. Mixed some colby-jack with queso asedero and
some cotija, yummy. Guac is the usual, avocados mashed up with some garlic, serrano,
cilantro, red onion, tomato, lime and a little splash of orange. I like mine a little
on the chunky side, how 'bout you? The beef was a chuck, rubbed, thrown on the
grill (cool side of a med-low heat grill that is), and then simmered with salsa once
it was falling apart tender.
