Default Easy Cabbage Roll Casserole

Easy Cabbage Roll Casserole

1 lb. Hamburger
=BD lb. Sausage
1 med. Chopped onion
Brown meat and onion-drain then add:
1 can tomato soup *
1 can (16 oz) stewed tomatoes or 3 med. Fresh tomatoes peeled and
diced/enough to make 2 cups.
3 tablespoons converted rice.
Stir mixture and bring to a full rolling boil.

Chop 1 small head of cabbage (I use the packaged Cole slaw mix)

Spray a 13 X 9 X 2 pan with Pam (I use a light coating of butter)
Put chopped cabbage in bottom of pan should be about 1 inch deep.
Pour meat mixture over the cabbage. Cover with foil and bake @350
degrees for 2 hours.

Stir before serving, serve with mashed potatoes

*For juicier filling use the large can of soup.

She is posting here to get hits to her commercial, ad-bearing website
to produce a little income. But the recipes she posts are, imho, below
the average level for rfc, most of whose participants know how to make
a white sauce. So my suggestion to her is that she step up her
"creations" to something beyond opening _two_ cans of condensed soup,
or _stewed_ tomatoes plus diced tomatoes. As it is, I doubt she's
generating much traffic. -aem

Perhaps it would go over better without sarcasm. Remember, too, that there
actually are some decent recipes that use canned ingredients. You may not
personally like them, but a lot of other people do.

It's a cabbage roll *casserole*. I make this all the time, 'though not
the same recipe as the OP.

Mine is based on my family cabbage roll recipe. It's just easier because
you don't have to blanche the cabbage, roll it up, etc. You can do the
same thing with your personal family cabbage roll recipe. Here it is.
There is a can of tomato sauce involved. I hope this won't be a
problem. :-)

Chop most of a medium cabbage into 1" pieces, and put into a large
casserole dish or roasting pan. (I use a 9-liter cast iron dutch oven.)

Mix a pound of *RAW* ground beef with about a cup of cooked rice and a
teaspoon of salt. Spread this mixture over the cabbage.

Saute a couple of diced onions with 4-5 slices of diced bacon. Add a
couple of tablespoons of paprika. When cooked, spread this over the
ground beef.

Mix a small can (12 oz?) of tomato sauce with about 1/4 cup lemon juice
and 1/2 cup brown sugar. Pour this over the top of everything.

Cook at low heat (250 - 275) for at least two hours. Three hours is better.

Makes 6 servings.

Canned tomatoes are usually better than fresh ones for this sort of
thing according to my tame gourmets.

I make egg roll filling sometimes and stop there. No rolls. I don't want
to call it "egg roll filling." So I call it "unrolled egg rolls."

Actually, I usually just call it "Cabbage Casserole." DH likes it no
matter what I call it.
