Default Low carb diet- what to serve?

I will having a guest for dinner who is on the South Beach Diet. I'm
planning to do a green salad and pork tenderloin, but I would like some
suggestions for veggies, etc. to serve with it. Seems like I need more than
one veggie to make up for the lack of a starch and bread.

Broccoli with blue cheese and walnuts? Cauliflower with melted aged
gouda cheese?

I've been improvising in and around South Beach for the past 60 lbs of
D's weight-loss regime and I have to say that it's not hard at all.
In your case, I'd toss some broccoli and cauliflower florets with
olive oil, smoked paprika, salt and pepper and roast them till they
were done. Some sliced fruit would also go well with the other things
on the plate -- orange slices with red onion drizzled with olive oil
and dusted with black pepper, say. Or and apple and grated carrot
salad with ginger and lime juice.

Also, you might want to check with your SB dieting guest since in the
third phase of the regimen, whole grain carbs like brown rice are
quite okay in moderate portions. Soba noodles, too, I believe.

Green Beans Almondine meets the low carb rule.

So does cooked Brocolli with Red Bell Pepper strips and pine nuts.

Mushrooms sauteed in butter do well too.

A nice table condiment is pickled cucumber, diakon radish, with or
without onion ...just put thin raw slices of all veggies used in white
vinegar with just enough sugar to season/sweeten the vinegar to taste and
a pinch of salt; and let meld about 1/2 hr in the fridge before using.
(you can cut this with a little water if it seems too strong).

Do you pickle your diakon, or use it raw? I have experimented with pickling
it using a dill pickle recipe, and it came out OK but nothing to brag about.
I would like to find something better.

Do you pickle your diakon, or use it raw? I have experimented with pickling
it using a dill pickle recipe, and it came out OK but nothing to brag about.
I would like to find something better.

Just like it says thin raw slices...I don't use the diakon pickled.

I have heard of using the Diakon as a fried rice substitute, and as a
potato substitute in soups but I haven't tried either.I just use it in
this pickled salad and other salads

Any green vegetable will do, and the list is very long,
but do not count peas as a green vegie for low-carb
dieters because peas are loaded with carbs, as are
other legumes. Spinach, string beans, collard greens,
are just three that come to mind which should be fine,
but why don't you just ask your dinner guest for some
suggestions? I am on a low-carb diet too and when I go
visit friends to eat, they simply ask me.

I might be mistaken, but I think snap peas are
fairly high in carbs.

I might be mistaken, but I think snap peas are
fairly high in carbs.

I've really liked a broccoli dish with some lemon zest in it - just
steam broccoli, zest your lemon, and add a little pepper. It's really
good.

I second the green beans almondine, but also like green beans in a
little bit of tomato with garlic.
