If I still ate meat, liver would be high on my list. And who hates
onions?

Heck yeah! If you liked it then, why not now?

I've only ever had chicken livers but I still love them battered and
fried and also made with onions with a bit of flour gravy. Good eats.

the only way I can get liver now is pre-packaged and frozen. The meat
is sliced incredibly thin and no way to minimize the veins or skin. In
the old days the slices were much thicker or I would have the butcher
slice the way I wanted. After cooking then the meat wasn't dried out.
I haven't had liver in decades. It used to be a regular at our table.
Really sad.

I occasionally buy calve's liver, flash fry it and eat it with buttered
bread. It's more likely to be found in the late fall when ranchers send
excess calves for slaughter rather than feed them through the winter.
